BUTCHER SHOP
In the Butcher Shop, all of our USDA Prime and Choice beef is sourced from local processor Aurora Angus Beef, 21 miles down I-88 in North Aurora, Ill. In turn, Aurora Beef sources all of its livestock from within 150 miles of its facilities, reducing animal stress and guaranteeing the best tasting beef. We also source pasture-raised beef from Brixen Ivy Ranch (150 miles away in Elizabeth, Ill.). A portion of Brixen Ivy’s proceeds go toward supporting children’s programs in inner-city Chicago.
